Bacon Wrapped Crab Stuffed Shrimp

Shrimp 16/20 – peeled and devein
1lb bacon
1lb lump crab meat
1 slightly beaten egg
1 Tsp. Worcestershire sauce
1 pinch of cayenne pepper
½ cup bread crumbs
¼ cup Mayonnaise
¼ Tsp. garlic powder
Juice of ½ lemon


Partially cook bacon at 325 degrees for 6 minutes. Blend all ingredients, except shrimp and bacon. Stuff shrimp with crab mixture, and wrap with par cooked bacon; secure with tooth pick. Bake at 325 degrees for 15 minutes.

Pancetta Cream Sauce

Pancetta diced small 1 cup
Chopped garlic 2 Tablespoons
Chopped shallots 2 Tablespoons
Borsion Cheese 24 ounces
White wine 1 cup
Heavy cream 1 gallon
Chopped chives ½ cup
Salt and pepper to taste

Add a small amount of oil to the pan, once hot, add Pancetta and reduce heat. Cook for three to five minutes. Add garlic and shallots, cook about a minute and reduce with wine. Add cream and cheese, reduce half way. Add salt, pepper, and chives.
